Most people have had sausage and peppers. But have you had it with pasta before? Here is a good change of pace:
Ingredients
6-8 mild Italian sausages

¼ cup chopped garlic
1 ½ onion julienne

1 ½ peppers (any color) Julienne
1 ½ cups heavy cream
1 16oz can tomato sauce
1 box of pasta of your choice
1 bag spinach
1 cup dice tomato
*cook your pasta and set aside*
Fill a sauce pan or stock pot with water and add the sausages (make sure sausage are covered); bring to a boil. Once sausage is firm to the touch remove them from the water to cool (Sausage does not have to be completely cooked). Once cooled, cut sausage into half-inch pieces.
Now lightly coat a hot sauté pan with vegetable oil and add sausage. As it begins to brown add ¾ of your garlic. Now add the julienned peppers and onions; mix in evenly and cover for about 10 minutes, or until peppers and onions begin to soften.
Add the can of tomato sauce and bring to a boil and then immediately reduce to a simmer and cover for about five minutes. Now remove the cover, add your heavy cream and bring to a boil. Then immediately reduce to a simmer for another five minutes and then cover and remove from the heat.
In a separate hot sauté pan lightly coated with vegetable oil, add the rest of your garlic. Once the garlic begins to brown add your spinach. Cook until spinach is a nice bright green, add diced tomato and season to taste.
In bowl or on a plate, put down your pasta and top with your sausage and peppers. For extra flavor and sex appeal serve your sautéed spinach on top! This is a great spin on your traditional sausage and peppers! Enjoy!
