Recipe: Sweet Teriyaki Chicken Salad

Have As A Meal Or A Wrap

Here is something that hits the big three: easy, healthy and delicious.

4 6oz chicken breasts

½ cup brown sugar

1 cups mandarin orange

2 cup mandarin orange juice

½ yellow pepper julienne

1 bag dole iceberg salad mix

1 cup chopped scallions

1/3 cup shaved or julienne carrots

½ cup wasabi peas

¼ cup rice noodles

1/3 cup lemon juice

¼ cup balsamic vinegar

In a medium bowl add chicken and teriyaki sauce. Put it in the refrigerator for about 20-30 minutes. Then in a hot sauté pan add a bit of oil; followed by chicken, brown broth sides and yellow pepper. Once peppers begin to soften add 1 cup of mandarin orange juice. Bring to a boil then a low simmer for about 2-3 minutes; add the brown sugar. Let it simmer for another 3 minutes then cover and set aside.

In a large take bowl, take the bag of iceberg mix, chopped scallions, wasabi peas, lemon juice, balsamic vinegar, and the remaining mandarin orange juice; and mix together. Remove the chicken from the pan and slice it, but keep it together. Take a nice hand-full of the salad mix and place in it in a bowl or on a large plate, nice and high. Then take the mandarin oranges and place them around the edge of the plate (you can also incorporate them directly in to your salad mix if you like). Then take the sliced chicken and place it on top of your salad, and take some of the sauce and peppers from the pan and on top of the chicken. Put a rice noodle sprinkle them over the entire salad and the chicken. For garnish; top the chicken with shaved/julienne carrots. Enjoy!
